ahhh...

sprouted brown rice, simmered with some black bean sauce, and broccoli. A little rice wine for tasting...coming in at 38% alcohol. I eat the Asian food, drink the Asian drink, admire the petite little Chinese chick at the Chinese grocer. I figure no matter my height or how western I look, today I am an Asian man. :p

We tried a new pizza place and it was excellent!! I was shocked but am happy we ventured out to try something new. The pizza where we live normally is very bad compared to what I'm used to where I lived previously. So pepperoni pizza was for lunch...and we brought some home so maybe for supper I'll have it again although I'm pretty stuffed so maybe not.

Homemade blueberry jam on whole wheat sourdough toast.

Blueberry jam=blueberries, soaked flax seeds, dark muscovado sugar, water.

Dinner was wholemeal pasta which I soaked for a little more than an hour before cooking. Mixed with corn and green peas, salt and a sauce I made from tomato, soaked flax seeds, hot pepper, onion, garlic, wine vinegar, lemon juice, and sriracha sauce. I only had a small serving of the pasta so I had some whole wheat sourdough bread as well with the same sauce.

Edit: Forgot to mention - green olives, paprika and some cayenne pepper were part of that sauce as well.

Whole meal spaghetti, soaked for a little over an hour then cooked, then mixed with a thick savory black bean sauce, cabbage, lettuce and a little oil and salt. Falafel balls of goodness added to the mix for a most delicious late afternoon meal.

Tonight it is red lentils cooked in vegetable stock with a good amount of tomato paste and diced onions, carrots, and potatoes. I added a little butter at the finish to help the flavour and it is delicious. :)

Stew sounded good, so I'm having some.

Slow cooking a fair amount of potatoes, a carrot, a brown onion, several gloves of garlic, a swede, with added salt and pepper. I think I will slow cook for about an hour then eat, and save any stock that's left over. Perhaps I'll have it with some sourdough bread. The broth is already very tasty.

Edit: I have noticed that my meat cravings are getting less and less. For the first 2 weeks I had them and broke my vegan diet twice in those 2 weeks. Then after a month I felt a chicken craving. I caved and bought a pre-cooked one - ate half, then threw the other half away. It tasted sort of disgusting to me.

Since then I have hardly had any cravings at all, but I do have to remember to keep my caloric intake up with more food.

Gut flora adapts to new diet over time and changes to accommodate it.

I cooked an interesting dish with pineapple pieces, rice, carrots, potatoes, and onion. Only a little rice. It was cooked in vegetable stock. Ti finish it I added some butter. It was very tasty. I also added soy sauce and chilli sauce. I like chilli sauce :)

That was done on Thursday. It's Saturday now.

Today's dinner is diced tomatoes, diced carrots, diced potatoes, diced onion, chopped chillies, and some minced pork & beef mixed. I will try it with some pasta first and then tomorrow use some rice.

Tonight's dinner is vegetable and chickpea curry. It has diced tomatoes, chickpeas, coconut milk, curry powder, minced garlic, vegetable stock, chopped carrots, diced onions, diced potatoes. It is cooking for an hour on medium-low. I'll serve it with some basmati rice. I may add some cooked red lentils for day two of it since I made enough for several meals.

Soft shell tacos:

Filling: Meat replacement, freshly chopped juicy tomatoes, diced tangy raw onion, garlic, chopped lettuce, oil
Smeared down middle of shell: Vegemite
Meat Replacement is: Mix of rolled oats, soaked walnuts, navy beans, sesame seeds, smoked paprika, cayenne pepper, salt, blended well then cooked until slightly charred.

Tasty, filling. They were good, however next time I think I will add some black bean sauce, avocado and perhaps some white wine vinegar and/or lemon juice to finish.

Have you tried making your own vegetable stock, MC - or is that what you are using already? I've found it's really easy and a way for me to use my vegetable scraps (freeze them in a large bag until I have enough to make stock).
