Pasta and Sauce

Simmering at the moment is a mix of chopped onion and garlic, which I caramelized, chopped mushrooms, various "Italian" spices, salt and unsweetened tomato sauce.

Fettuccine pasta is boiling and a large handful of pepitas has been soaking in water. When the pasta is done, it will get mixed with the sauce, with a little added oil on low heat, and the soaked pumpkin seeds will be pulverized and also added, along with some toasted sesame seeds and broccoli worked in as well.

Around midnight I woke up to finish my little dinner LOL And then I had butterscotch pudding for dessert. Now I'm drinking an Ensure nutritional drink and my husband is going grocery shopping for some foods I can eat. Like pierogies!

Burger and fries.

Fries were homemade and not actually fried

Burger patty was meatless and mainly consisted of soaked and cooked brown rice and pinto bean, mixed with various spices and a little potato flour. Plus lettuce, pickles, onion, ketchup and mustard between wholewheat sandwich slices.

It's nice not feeling like I need a caffeinated beverage after a meal like this. I feel full but not weighed down.

I had almond milk in my coffee this morning instead of the powdered milk I usually have. Not completely animal free (and I will not give up honey) - but definitely heading in that direction.

Very cold jello. My throat was hurting when I woke up and because of all the tubes that were down my throat I might have a sore throat for 6 months :(

I am breaking up minced beef for my pasta sauce. It has diced tomatoes, garlic, port wine, onions, and chillies so the minced beef is slowly warming and becoming easier to break up (it was still a bit frozen).

Rice and bean curd (Tofu)

Although Tofu doesn't need to be soaked, I did decide to marinade it for a few days in mixture of spices including onion, garlic, ginger, black pepper, dark muscovado sugar in soy sauce and water

Now I'm having it with basmati rice, diced tomato, lettuce, salt, oil.

I haven't had Tofu in ages. Nice change.

Tofu is surprisingly expensive.

Only because it's famous. People think "vegetarian" or "vegan" and they think "must eat tofu". It's also frequently an either/or for Chinese or even fast food type noodle places - as in - "we offer these meats" and "we offer tofu alternative". Typically other legumes / properly prepared seeds/nuts are not offered at all, or simply as garnish (like cashew nut).

That being said, gram for gram it is cheaper than 4 or 5 star mince at least where I'm at, is suitable for marinades, and like other properly prepared legumes or seeds I can have it with large amounts of starch (rice) without feeling weighed down or getting indigestion.

Compared to soy beans or other legumes that are dry and sold in bulk, however, yeah it's expensive.

While out, I bought a few spices that I don't ever remember using or having before. One of them is Cardamom.

I'm having a tea made with Cardamom, Cinnamon, Ginger, some dark muscovado sugar, almond milk and water.
