Finished off my homemade hash browns this morning/early afternoon, along with some homemade chips (fries but not fried), which are nearly completely gone. Also had a few scrambled eggs. My chips and hash browns have lasted me for several meals, I'm glad took the time to make a bunch and freeze them (yes, my fridge/freezer is back on). Unlike store bought ($$) and take away (much more $$) - I control the taste and nutrition - and save money .

These pre-cooked, breaded chicken burger patties I got from the supermarket. In a sandwich with some lettuce, mayo, salt and a dash a pepper - they are extremely similar to a McDonald's "McChicken". For about 1/6 of the price.

Cream cheese on a leftover hamburger bun.

I cooked up some vegan patties last night:

½ Rolled Oats
½ Pepitas
(mixed into powder with..)
1/8 spice mixture
+water

Cooked, frozen, then reheated...

then had them on wholegrain toast this early afternoon with some fresh tomato, Cos lettuce, Sriracha Sauce, Ketchup, salt.

Delicious! And I'm full.

I had a lovely lunch of coleslaw, roasted chicken, avocado, white bread rolls with lovely crunchy crusts, baked potato wedges, and for sweets a nice piece of apple and strawberry pie with vanilla ice cream. So far there's been no desire for dinner - I am still amply full from lunch :lick:

Tonight we had baked potato with butter,cheese, coleslaw, baked beans, and tuna mayo and corn on the cob...I am now stuffed and couldn't finish mine so its in the fridge for tomorrows lunch..

Vegan Tacos!!

Taco "meat":

-------------------------------
Pepitas (soaked 1 hour)
Rolled oats
Paprika spice
Cumin seeds spice
Hot chili spice
- blended

on a base of:
Caramelized onion
Mushroom
Diced cabbage

mixed with

honey
soy sauce

and finally oil before removing from heat

Put in a shell with:

Iceburg Lettuce
Fresh diced tomatoes
Dash of salt.

Soooo good!

The filling ("meat") mixture in the previous (#233) post, minus the cabbage, plus sesame seeds and I didn't soak the pepitas.

...on toast with avocado and tomato.

Filling as an adjective for both the tacos in the previous post and for my hunger satiation in this one is apt. I do not feel burdened, but I will not need food for a good while.

I'm going to eat oatmeal in a few minutes. I've only been drinking the Ensure or Boost drinks in the morning the past 5 days but today I want solid food Yay

What kind of cheese? I just can't get into the mood of eating cheese so early in the morning!! I think I'm conditioned to eat sweet things all my life like cereal, pancakes, french toast.

Nutrient Burgers:

Equal parts rolled oats, pepitas, diced mushrooms (part=1 small handful)
1/2 part sesame seeds
pinch of paprika, cumin seed powder, black pepper, muscovado sugar
2 pinches onion powder
3-4 pinches salt

Blended with water and cooked in a pan lightly coated in rice bran oil.

...And placed on toasted whole wheat bread with fresh lettuce, tomato and the only thing that made it non-vegan - mayonnaise.

2 small patties left over.

Fettuccine pasta with sauce.

Sauce is:

Half onion
2 gloves garlic

Diced, cooked until brown then adding in a blended mix of

Pepitas
pre-soaked lentils
lemon juice
salt/pepper
unsweetened tomato paste
cayenne pepper
oil

The leftover lemon peels used in this meal and from the last day or so put into a jar with white vinegar. In 2 weeks it will be a lemon smelling cleaning agent.
