I wouldn't recommend the ones that I tried. After a couple hours, the tops started getting too gummy and the insides got heavy and weren't very good. I am going to look for a different recipe or maybe try adding another egg once the prices of eggs come down. I want a fluffier muffin.

Curious. My wife doesn't use eggs at all in her recipe. With the price of eggs that's probably a good thing.

That'd be great, thanks! Eggs aren't as expensive where I live as other places, and the brown ones are $5.49 a dozen. The brown ones are usually more expensive, but now they're cheaper. The Amish are selling them for $4 a dozen, but they haven't had any when I've driven by their stands.

I know the farm stands don't wash the eggs, because it's better to keep the membranes on and then they can be set out for a couple of weeks. But do they keep track of how long they leave them out? Maybe now is a better time to buy since people are gobbling them up :)

I remember a few years ago my wife and I used to visit a small market. There were a few vendors there, including an Amish lady who sold mostly produce. Apparently the law said the eggs she wanted to sell had to be refrigerated, which prompted an emergency meeting for her church because they had to determine whether she was allowed to use an electric fridge. I'm not sure if they determined she was allowed to use it, or if she nominally transferred ownership of the eggs to a non-Amish friend who wasn't subject to their rules and could put them in the fridge, but her eggs continued to be available.

These are actually vegan muffins. You can swap the flour for gluten free flour if you need them to be gluten free.

1 cup pumpkin puree (NOT pumpkin pie filling)
3/4 cup brown sugar, firmly packed
1/3 cup canola oil or other oil of choice
3 tablespoons maple syrup
1/2 cup unsweetened applesauce
1 1/2 cups all-purpose white flour
1 teaspoon baking soda
1 1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons pumpkin spice
1 cup chocolate chips
optional: coconut, walnuts, pecans etc for crunch

Preheat oven to 400 degrees

Prepare muffin tin pan with 12 liners

In a large bowl, combine pumpkin, brown sugar, applesauce, syrup and oil and whisk together

Add flour, baking powder, baking soda, salt, pumpkin pie spice and chocolate chips and stir together until just combined. Do not over mix.

Scoop pumpkin muffin batter into muffin cups and bake for 20-25 minutes

Remove from oven and allow to cool on wire rack in muffin pan for 10 minutes.

That's kind of sad since I was told that refrigeration shortened the life of those eggs that could be sat out for a week or two when they had the membranes on. I wonder if that could be confirmed though?

Those sound really good!! I'll be saving this for next fall when I get my pumpkin cravings!

No need to save them. My wife and I had a friend over for coffee this morning and she made some muffins for the three of us. If you can get a tin of pumpkin you can make them. They've become a go-to for my wife to make so we can have them with afternoon coffee.
