I had a Chicken Gyro and fries for lunch.

Pasta. I recently discovered Vincenzo's plate.

For late lunch/dinner I had vegetable spring rolls with ketchup dipping sauce, plus a sandwich consisting of whole wheat bread, Dijon mustard, salt, tomato, lettuce and sunflower seeds.

Egg fried rice. Ready in no time. Everyone loves it.

Cheese omelet, toast and coffee.

Late breakfast was a large plate of re-heated frozen fries, along with some sunflower seeds, lettuce, a few slices of wholewheat bread, lettuce, salt and ketchup.

I've been making an effort to wean myself from the stripped grains, but today for evening meal I decided to have some white pasta. I added Falafel, sunflower seeds, and a homemade salsa sauce of tomato sauce mixed with onions and garlic and salt.

Pasta again. Day in day out. Today with celery, carrot and onion in a blender and tahoe. I'm starting to get enough of it though and should make some other stuff. I'll throw the rest in the freezer.

I love using celery, carrots and onions with pastas and soups!

Ooof...there's nothing like having a fully prepared homemade meal that tastes great and is super satisfying.

Homemade flat-bread: Whole wheat, white wheat, water, salt
Homemade Beans prep: Garbanzo beans, Cumin, salt.
Homemade Salsa: Tomato paste, onions, garlic, salt, chili peppers.

Wrap the latter two along with some lettuce in the former and I've earned my Mexican hat!

I made homemade flat bread again and this time added crushed flax as a small part of the recipe ( about 5%).

Filled with fried mushrooms, avocado, potato gems, tomato sauce, onions, garlic, lettuce and salt. Yummy

Tonight I made onion rings for the first time. I buy store bought sometimes and was surprised at how simple it was to make my own. The batter I made of basic base of white flour and water, with added garlic powder, salt and ketchup. They turned out good!

I made french toast for breakfast this morning.

Toasted bread with tomatoes like I have each day every day and 2 boiled eggs and coffee.

A change today. Hard bread with tomatoes.

Vegan Fettuccine bolognese. The taste and texture (of the sauce) was so near what I remember as a former meat eater that I'm relatively sure I could fool someone who thought they were eating a meat based sauce. It was delicious. I love being Vegan.

I had chicken, rice, potatoes, and veggies.

I had 2 eggs, toast and decaf coffee for breakfast.
