I have a neighbor that is a baker and recently he gave me a simple tip to make lighter homemade bread: Use liquid yeast. Ok - so I started some bread yeast in some sweet water (water with added honey/raw sugar, heated then cooled to room temp) - waited until it was active (bubbles) - then added it to the normal flour/water mix. It came out very nice! More light fluffy than I usually get just adding dry yeast.

This morning's breakfast was my homemade bread + a sauce I made from tomato, onion, garlic, pepper powders along with some sea salt and olive oil to mix. Mmm...that and some lettuce. Was tasty. Me full.

I am experimenting tonight, so it is beetroot, carrot, and onion with basmati rice. I'd add chicken but it is frozen. It will be defrosted by tomorrow night.

If I buy chicken or some other meat that needs freezing for longer storage I separate it into sections. Doing this allows me to place what I'm going to eat in a steamer for quick defrost. The steamer I use is just an adjustable circular metal mesh that fits inside a pot, over water to be boiled.

The beetroot, carrot, and onion with basmati rice was tasty. I added a little all purpose seasoning when it was done - quite pleasant.

I just had chicken (soft shell) tacos with lettuce and homemade sauce. I also made the soft shells with flour, water, oil and a rolling pin before cooking them.
