You could go to the "what are you eating" thread started by George to find out what stuff I've recorded for many meals.

In general, my staples are starches: Potato, whole wheat bread, corn, rice, rolled oats sometimes, mixed with legumes and other seed produce(all kinds including grains and nuts), vegetables and some fruit. Flavorings for starch based dishes vary with my mood. For instance I might make a sandwhich with a lentil/potato patty along with ketchup, mustard and pickle and perhaps even some liquid smoke for a 'burger' type flavor. Sometimes I make sweet fruit smoothies with seed milk, fruit, cocoa powder and raw sugar. Sometimes I will eat junk food like fried corn chips. Overall, try to keep it on the healthier/non refined side.

Occasionally I eat stripped grains (like white rice), but if I do, I always mix in a healthy amount of soaked/cooked seeds/legumes etc and vegetables to make up for lost fiber and other nutrients missing from the stripped grain. The reason I add extra to white rice is because it is basically worthless except for energy. I learned early on that as a vegan we need more fiber to feel satisfied, and it's not wise to skimp on vitamin/mineral rich food for very long (whole grains/seeds/nuts, vegetables).

For this reason I also soak fairly large batches of grains (wheat seeds, barley, and a legume of some type (like lentils), sprout the grains and freeze, and cook the legumes and freeze. These come in handy for adding to dishes either whole or pulverized, mixed with sauces/spices etc for more nutrients.

I make my own seed milk (usually from almonds) and add to morning coffee.

I use oil for cooking sometimes, although often instead of this I will add whole flax seeds to my water based/sauteed vegetables for both the oily texture and the extra nutrients whole flax provides.

Food and drink section. It's stickied there. That thread was started before I became a vegan, so most of the vegan stuff I listed is later in the thread.

Isn't this thread specially for vegans? To my knowledge, there's only one other that posts on this forum.

When did you become a vegan?

October 2017. I documented in the Milestones thread. It started with a few screw ups that initial month, but I mark that as my beginning.

What made you decide to become a vegan?

Shortly, a combination of life factors and information I was exposed to.

Life factors: Clearing up several minor health issues by altering diet. I was not vegan at the time I made the changes, but I did notice that restricting certain meats and dairy and increasing whole grains, legumes, vegetables and fruits was having a marked effect on several health issues I was experiencing at one time - one of which was a problem a local GP told me would only be solved by drugs. It cleared 90% up without drugs.

Life factors: I was married (now and for some time widowed) and my spouse died very early in life. I came to the conclusion that her dietary habits greatly contributed to what ultimately caused her death. Many would not draw this conclusion because she was not what one might consider extremely unhealthy from the outside (for example, she was overweight but not obese).

Information: I came across radical (to me at the time) information on the correlation between health and diet from several sources that validated each other's claims.

Information: I came across information from longer term vegans (10 years +) and their message regarding the unnecessary consumption of animals and the animal cruelty that accompanies it.

All those factors contributed to me giving it a try. More personal health problems were lessened/eliminated when I did and I noticed an increase in overall well being when I stick to a mostly whole foods vegan diet. I still remember what life was like in my body before this and I never ever want to go back.
