You could go to the "what are you eating" thread started by George to find out what stuff I've recorded for many meals.
In general, my staples are starches: Potato, whole wheat bread, corn, rice, rolled oats sometimes, mixed with legumes and other seed produce(all kinds including grains and nuts), vegetables and some fruit. Flavorings for starch based dishes vary with my mood. For instance I might make a sandwhich with a lentil/potato patty along with ketchup, mustard and pickle and perhaps even some liquid smoke for a 'burger' type flavor. Sometimes I make sweet fruit smoothies with seed milk, fruit, cocoa powder and raw sugar. Sometimes I will eat junk food like fried corn chips. Overall, try to keep it on the healthier/non refined side.
Occasionally I eat stripped grains (like white rice), but if I do, I always mix in a healthy amount of soaked/cooked seeds/legumes etc and vegetables to make up for lost fiber and other nutrients missing from the stripped grain. The reason I add extra to white rice is because it is basically worthless except for energy. I learned early on that as a vegan we need more fiber to feel satisfied, and it's not wise to skimp on vitamin/mineral rich food for very long (whole grains/seeds/nuts, vegetables).
For this reason I also soak fairly large batches of grains (wheat seeds, barley, and a legume of some type (like lentils), sprout the grains and freeze, and cook the legumes and freeze. These come in handy for adding to dishes either whole or pulverized, mixed with sauces/spices etc for more nutrients.
I make my own seed milk (usually from almonds) and add to morning coffee.
I use oil for cooking sometimes, although often instead of this I will add whole flax seeds to my water based/sauteed vegetables for both the oily texture and the extra nutrients whole flax provides.
