Breaky today was homemade hash browns, Chinese cabbage, spring onions, some pepitas and almonds. Simple dressing of lemon juice and salt. Mmm.

Homemade whole wheat wraps filled with hash browns, cabbage, pepitas, pickle, tomato sauce, lime juice and salt.

Also, coffee with seed milk (almonds, sesame seeds, flax).

I had tomato/lentil soup for lunch: Tomato, lentils, onion, garlic, basil, salt, pepper and a little Indian sugar.

Dinner was unconventional for me. Frozen bananas sprinkled with sugar, cocoa powder and peanut butter as a dip. It was quite satisfying and tasty.

I made fries yesterday too! I didn't grow my own potatoes though. I baked my fries and they actually turned out crispy!

Breaky, lunch today was:

Coffee mix (barley and coffee) with seed milk (almonds, sesame this time), whole wheat toast, lentil/flax scramble with Italian herbs and salt, and Lamb's Quarters (aka pigweed/goosefoot/wild spinach) which grows in my yard.

White pasta with falafels, crumbled tofu fried with onions, garlic and chia seeds in water, some pasta sauce, and a small serving of wild spinach (Lamb's quarters) leaves and some seeds of the same.

I was thinking about your vegan french toast...so today I went without the egg/milk mixture. Of course, I don't have vegan butter but I'm sure there is something else you could use that's tasty in place of it?

I have real butter and I also have spray butter. So I put the real butter in the skillet and then sprayed one side of my bread with the spray butter and then put my homemade vanilla in a spoon and ladled it across both pieces of my toast only on one side. That's the side I put onto the skillet first. I sprayed more spray butter on top and when browned I flipped them. I like them crispy and they turned out really tasty!

I don't use vegan butter. It can be found at the supermarket though. Basically it's just oil that has been partly solidified to give it a butter texture.

Some homemade vegan sausages with bread this morning.

Sausage main ingredients: soaked lentils, potato, onion, garlic, flax plus spices. Blended, then rolled and cooked in a bit of oil.

Together with a bit of diced tomato, lettuce and lamb's quarters (wild spinach), they made tasty sausage rolls.

I marinated some tofu last night and fried it up this morning for breakfast, along with whole wheat toast and some lettuce. Simple start to the day along with some coffee/barley mix a little earlier with seed milk, and a tomato juice concoction I've come to drink regularly.
