Coconut milk is excellent in curries.

I clicked on a link on 'Youtube' for how to make a basic curry, figuring it would be something simple I could add to my toolkit. The guy was going a mile a minute, and throwing together all kinds of stuff. Yeah... Basic curry... :p

Buy some Keen's curry powder, some Garam Masala, a can of coconut milk, a can of chick peas, garlic, onions, mushrooms, some chillies if you like heat, then do this
  1. Place one very heaped teaspoon full of Keen's curry powder into a 2 litre microwave container and one very heaped teaspoon full of Garam Masala into the same container,
  2. add the coconut milk to the container and mix with a spoon or fork until the powders are mixed into the coconut milk
  3. open and drain the chick peas can, wash the chick peas, shake them a little to remove excess water then add to the microwave container
  4. chop the onions, add about a tablespoon of crushed garlic, and then add to the microwave container
  5. chop up the mushrooms - if they are canned then drain and wash them - add to microwave container
  6. if you like heat then add as much chilli as you like, but remember how hot the kind of chillies you have are ...
add a little water if you need to, just enough to cover the contents.

cook on high for about 6 minutes then on medium for about an hour - have a look at it while it is cooking and add a little water if needed, don't worry if the amount of liquid reduces, the idea is for it to thicken a little while it cooks.

In the last 15 minutes of cooking add a little corn starch, maybe a tablespoon full or two but no more it is there only to thicken the cooking liquid.

If you like saltiness in your food add salt after cooking

If you like pepper add pepper after cooking

That should work and it is not very complicated.

I went to a pub restaurant for lunch today and had a surf n turf (steak bits and shrimp) appy and a lemonaide marguerita. It was very tasty.

Gonna have sauteed mushrooms, bok choy, w/ garlic and ginger and poached eggs, along with tea made from the ginger peelings w/ maple syrup. My go-to breaky lately.
