Yes, it is rather pretty.

I had some cookies and milk for supper last night and then slept my a baby :)

Today the plan is to cook some chicken pieces with rice in a satay sauce. I've always been rather partial to chicken satay.

Never had satay, how do you make the sauce
Peanuts all crushed up, and spices, and a bit of coconut milk. Those are the basics. You can use peanut butter (crunchy is best).

Here's a recipe
1 teaspoon canola oil
1/2 small brown onion, finely chopped
1 garlic clove, crushed
1 small fresh red chilli, finely chopped
70g (1/4 cup) natural crunchy peanut butter
125ml (1/2 cup) water
1 tablespoon fresh lemon juice
1/2 teaspoon balsamic vinegar (doesn't need to be balsamic, but if you use other then use less)
1/2 teaspoon brown sugar (white sugar will work too but use a little less)

Heat the oil in a saucepan over medium heat. Add onion and cook, stirring, for 5 minutes or until soft and golden. Add garlic and chilli and cook for 1 minute or until aromatic. Remove from heat. Add peanut butter and stir to combine. Place over low heat. Add water, lemon juice, vinegar and sugar. Cook, stirring, for 3 minutes or until sauce thickens.

That sounds good but where is the coconut milk

That sounds good but where is the coconut milk
It isn't there, but you can add some if you like :) A tablespoon full or two. Not much.

i've had eggs with sauteed tomatoes...it's a great combination :)
