Peanuts all crushed up, and spices, and a bit of coconut milk. Those are the basics. You can use peanut butter (crunchy is best).
Here's a recipe
1 teaspoon canola oil
1/2 small brown onion, finely chopped
1 garlic clove, crushed
1 small fresh red chilli, finely chopped
70g (1/4 cup) natural crunchy peanut butter
125ml (1/2 cup) water
1 tablespoon fresh lemon juice
1/2 teaspoon balsamic vinegar (doesn't need to be balsamic, but if you use other then use less)
1/2 teaspoon brown sugar (white sugar will work too but use a little less)
Heat the oil in a saucepan over medium heat. Add onion and cook, stirring, for 5 minutes or until soft and golden. Add garlic and chilli and cook for 1 minute or until aromatic. Remove from heat. Add peanut butter and stir to combine. Place over low heat. Add water, lemon juice, vinegar and sugar. Cook, stirring, for 3 minutes or until sauce thickens.
