That is just not true. Certainly any and all Lutherans, like any actual Christians, can give up meat, for one day in a week, or just a series of days in a year, as if not choosing to give it up from now on. Going with permitted meat is going along with the fallen world. Those having meat have it with blood still, so not really with what was permitted that the believers doing that claim. God never said that was very good. See how many times God called anything very good.

If you believe that God intended for humans to eat animals, then you must also believe that God intended for humans to suffer with cancer, heart disease, diabetes, Alzheimer's and autoimmune diseases, organ failure, obesity, and all of the other health issues that consuming animal products has been irrefutably proven to cause.

Meat consumption is not necessary for humans to stay healthy, but it’s also potentially quite harmful. Consider meat’s links to heart disease, diabetes and certain cancers. Or the millions of people who fall sick from listeria, E. coli, and salmonella each year due to the consumption of contaminated meat. Or the more than 2.8 million Americans who contract antibiotic-resistant infections—which is a result of a nasty upshot of the rampant use of antibiotics on factory farms. Meat consumption hasn’t been a boon for the health of Americans and it would not be better elsewhere. There is a high prevalence of obesity and diabetes and one of the highest rates of cancer among the American population. In light of these numbers, saying meat is essential makes about as much sense as saying cigarettes are essential.

The Bible does not indicate to me that we were designed originally for eating meat. And now science does not indicate it either.

We might avoid animal products and almost any processed foods. That is not just really healthy, for avoiding serious issues to health, not using animal products means not contributing to the great suffering of animals used in animal agriculture, and it is more sustainable in this world with not contributing to what uses more resources, land, and water, and what is diminishing the environments of the natural world rapidly, with the major species extinction event happening with that.
