Do you pickle anything?

I recently started pickling various vegetables if I think I bought too much or am not going to use right away. This saves some waste and also me buying store bought pickles. So far I've pickled Zucchini, carrots (wouldn't recommend), and mushrooms. I think the nutritional value goes down a bit for pickled veggies, but they still provide fiber as well as tang for meal toppings.

I've found that around 1/3 vinegar to 2/3 water plus salt is a good base. Throw in some chopped garlic, dill seeds, onion and other spices for taste.

I pickled my cucumbers when we had WAY too many from the garden. The garlic ones were similar to the Claussen pickles. I also did the refrigerated sweet pickles but the longer they were in the jar, the sweeter they got and that wasn't good.
