I have a lot of basil growing right now so I decided to quickly make some pesto (without pine nuts). I'm surprised at how well it turned out without freshly grated cheese but it's really, really good! I don't know the exact measurements I used but I grabbed about a cup or more of basil and chopped it up fine with a hand chopper. Then I added parmesan cheese, salt, pepper and fresh garlic. I mixed it up and put it in the fridge for about 15 minutes and then spread it on a piece of toast. Yay! Winner!
