I always remember the curry my mum used to make when I was a kid. We used to have a roast dinner with chicken on Sunday every week and she would always use the leftover chicken that we hadn't eaten to make a chicken curry with rice for a meal for the following week. It was never too spicy and always filling due to her adding a lot of vegetables to it.
