The particular vestments vary with the occasion, but they mainly derive from either pre-Christian Jewish use or else from Roman street dress of the first century. Symbolism also is attached to each garment, such as 'girding one's loins' for the cincture, purity for the long white garment (alb) which even servers/altar boys/acolytes may wear, and so on. The colors of some of these, especially the poncho-like chasuble, change with the seasons of the church year and the different Bible events being memorialized, such as green for hope, violet for penitential seasons, etc.
