It would help to know which type of eating disorder, if you don't mind answering?
I'm not vegan or vegetarian, even though when I was younger I hated to eat meat and mostly ate a vegetarian diet. But that was because I hated the taste and texture of meat.
Have you ever had Seitan? It's a vegan meat and it's really good, although expensive. Years ago my daughter dated a guy who was vegan and we were making homemade pizzas and he brought seitan to cook up and put on his. He put barbeque sauce on it (his vegan version) and it was excellent.

If an eating disorder is about eating too much, then that can be because of eating the wrong foods that are not giving the body the proper nutrition it needs, which can be different for each person. If the disorder is because of simply not eating the right foods, same thing, can mean the body is not getting the proper nutrition it needs, so the desire is to eat more.
Either way, I'd recommend seeing a Dietician.
I think today folks eat too much processed foods, sweets, cakes, cookies, sodas, basically a lot of sugar. Refined sugar is not natural. We get natural sugars from fruit.
