I like to roast potatoes, onions, carrot, Brussels sprouts, and sweet potato. Makes for a nice tasty meal, add some spices and seasoning, maybe a little butter and yum yum :) Good for cool weather.

Maybe you like kale with sausage.

Kale and potatoes, cook it and mash it all together and throw a sausage on it and don't forget the meat juice.
