I can think of a number of things that God didn’t create:

Joy,
Peace,
Patience,
Kindness,
Faithfulness,
Goodness,
Gentleness,
Self-control.
Also, mercy, grace, truth, generosity, holiness, righteousness, justice, etc.
God didn’t create any of these things.
The Bible says that sin entered the world through man, and death through sin. So before man there was no sin, and therefore no death. Therefore, no animal could go extinct before man.
Why would it be? This is a book revered by the early church, and declared by multiple early church councils to be scripture. So it’s a perfectly relevant question to know whether or not it contains mistakes.
