Chilli sauce.

I like chilli sauces especially very hot ones. I use them as a condiment or as an additive when cooking. Not so long ago I bought some Sriracha Sauce and now I have used it all up, except for a little in the bottom of the bottle. What I liked most about it - aside from being a rather good chilli sauce - is that it was not too thick so it was easy to measure and use in cooking. But Sriracha Sauce is kind of expensive in Australia and there are cheaper and in my opinion better tasting sauces available from south east Asia and China. So I bought some ABC Extra Hot Chilla Sauce (Sambal Extra Pedas). The only trouble is that ABC sauce is thick, like Heinz Tomato Catsup, so I decided to take some out of the bottle and add Somme vinegar to thin it out and also to add some sourness to it. It worked well, so I filled the Sriracha Sauce bottle with the thinned ABC sauce and it tastes delicious - far better than Sriracha in my opinion. Now I am using it for my cooking and I'm as pleased as Punch with it

What foods do you use them on (as condiment)?

My wife's 80 yo father who just finished up his chemo treatments came to the states so my wife went all out to make it special for him. She paid to have a big tent put up for shade and had the Father's day party catered by Cafe Rio. Anyway they supplied two salsa dips. One hot and one mild. The hot one was to die for. The next day I put it on my tortillas and scrambled eggs and was in heaven! Little did I know that the following night they had a get together at her nephew's house and they took the dip over there and didn't save me any!

Sirache sauce mixed half and half with vinegar makes the best buffalo wings! Added after it's deep fried

I like hot sauce. A friend of mine makes a few sauces, including one made with scorpion peppers and one made with scorpions and Carolina Reapers. It's worth treating those with respect, or they hurt.

They are hot. A while back I ate a tiny slice (and I mean a tiny slice) cut from a scorpion pepper and spend the next 20 minutes wishing I hadn't.

Chilli sauce has a very specific definition in much North America. It's actually quite mild, kind of a zipped up ketchup with less sugar and a bit more chilli pepper in it, and it is sold as such ... chilli sauce. Heinze has it's version. However, as far as hot sauces go, I used to enjoy them more, but I find that most of them overpower the flavours of the food which they are seasoning. Unless something actually calls for some "fire", I tend to use less hot sauces.

The one I mentioned (ABC Chilli Sauce) is made from chillis, sugar, water, garlic, and salt with some preservative but there's no tomato in it.
