Essentially, God declared the seventh day Sabbath then man decided he had a better idea.

A reflection of man deciding he had a better idea than God about the dietary laws God gave him in the Garden of Eden?

God always knows best and gives us the that are for our greatest good, then Man always decides he knows better and changes them to suit himself.

Are you still killing people when they break the Sabbath rules @Frankj? Of course not. The NEW covenant, which Jesus instituted in Luke's account of the Last Supper, replaces Passover with the Lord's Supper and circumcision with baptism. However, the inner principles of one day in seven, rest, and group worship carry on in the new covenant, while the external rules for the nation of Israel are gone.
