I am not sure what you mean by which kind. We go to a locally owned one which has a huge salad bar as well as lots of selections for meat and sides. Then there is a small desert bar. They have the best bread pudding.

There are some that are strictly Asian foods, some that are all American, some that are mixed with Italian and Asian, etc...

I haven't eaten at a buffet for a long time. There was one near me that I liked but it closed down, allegedly over health violations but it always seemed clean when I was there.

There's a Chinese place near me that does a buffet but there's only so much appeal to the same dishes again and again. Usually they seem to be priced such that having a plate or two doesn't feel like good value for money but having more leaves me feeling over-full a short while later. And then there are the general concerns of the kind of people who taste food off the serving spoon and then put it back in the dish.

There was a local Golden Corral that had really excellent food!! We went there for Thanksgiving when we first moved out east and wow, we were so impressed! All our family members were disgusted because the ones by their houses were awful. They will never understand what an amazing meal we had at that place. We returned another year and it wasn't the same and I think the chef makes all the difference in a good meal.

I've found that buffets tend to be great in quantity and terrible in quality.

We had a Golden Corral restaurant in my area. It went under with the pandemic. I was there for breakfast once: a good value certainly but none of the food was particularly good. I went there for lunch once; it was considerably worse. It was busy both times so obviously many liked it. There is a "Chinese" buffet close by but I've never been there.

I don't know that I'd say they were always terrible in quality but the simple economic reality is that if the people who weigh 400lb+ and more are allowed to eat as much as they can for $12.99 you know there are going to be corners cut somewhere.

It reminds me of the story (allegedly true, but who knows) about three very large men who went to a Chinese buffet and ate some truly stupid amount of food. As they were ready to leave the owner approached them and said "you men no pay, but you no come back".
