If God is all knowing, and God has always existed, then hasn’t his knowledge always existed? If so, then how can knowledge be created?

This is a good point, proving the Trinity. God, His Wisdom and His Word, all had to pre-exist creation, in order for God to be God, and create everything. This is a valid belief, held by some Jews even before Christ. As documented in their Targums.

Targum Neofiti Genesis 1:1 From the beginning with wisdom the Memra of the Lord created and perfected the heavens and the earth.

-They believed in the LORD, the Wisdom of the LORD and the Memra of the LORD. A True Triune LORD.

If we consider that God knows everything and knew it before anyone else, and since most knowledge we have and use is relative to the created order, then since God created all things, I guess he created knowledge.

If you separate knowledge from God, you are left with a "god" without any knowledge, that somehow had to create knowledge without any knowledge of how to do so.

But then did God create knowledge or, since God has all knowledge before anyone else had it, was knowledge something that just is, like God just is?

Yes, it has to be, God is all-knowing, so all knowledge must have already existed within God, so all knowledge is Uncreated just as God, and as much God as God is.

Including the knowledge of evil?
Like, if I have a sinful thought, maybe something really strange that perhaps has never been thought of before, God would have known from eternity about this thought of mine.

Genesis 3:22 And the LORD God said, Behold, the man is become as one of us, to know good and evil: and now, lest he put forth his hand, and take also of the tree of life, and eat, and live for ever:

It doesn't really prove the Trinity, though, which is about the nature and identity of the One God we worship.

What you are referring to is proving that something or other has three different qualities, or that there are three different items that are in some way related to each other. That's not what the Christian concept of a Triune God is all about.

No, these are active subjects who "created". They are not mere passive qualities or items, they Three Active Uncreated Creators, Three Active Persons, because they "created". Three Persons, One God. The True Triune God.

All wisdom comes from the Lord, and is with him for ever - Wisdom

....I'm interchanging wisdom and knowledge in this case to make them interchangeable....
