Zucchini Recipes Needed

The zucchini plants in my garden have taken over and I'm soon going to be inundated with numerous zucchini!

I need recipes!! Right now we bread and fry them, add them to stir fry and the 3rd way is to just fry in butter with onion flakes and bacon bits and sometimes add green beans too. I need more recipes. What else? Zucchini bread is a thought but I don't want too many bread products in the house.

Trying to avoid sweets! If we freeze it then our options are only for mushy things like making into breads or cookies, right? I can't think of anything else though that it could be used for after freezing.

My wife makes them into blueberry zucchini bread. It's really good. You said you don't want too many bread products though. Beyond that about all I think they are good for is chucking in the trash.

Oh no. I worked too hard on my garden. We're going to either eat it ourselves or give it to the guinea pigs. The last time I gave them zucchini they weren't fond of it but my mom said they loved it at her house so we'll try again once they get here.

I just plucked 2 large zucchini from the garden that were tiny the day before yesterday!

Today I decided to slice one very thin and put some Pam spray on it with seasonings and baked it in the oven. I need to bake it longer and at a higher temp but the ones that were crispy were SO GOOD!! I need to perfect this recipe. It didn't really need the seasonings at all so next time I won't add any.

Toss zucchini slices with olive oil, seasoning, salt & pepper and about 2 tablespoons of the parmesan cheese. Place on a baking sheet and top with remaining parmesan cheese. Bake 5 minutes. Turn oven to broil, place pan near the top and broil 3-5 minutes or until cheese is melted and zucchini is tender crisp.

No I haven't as I don't cook much. But they sound good.
