What is your favorite cut of steak and preferred doneness?

Animal flesh is for foolish people deceived by tradition, marketing and even religion to believe it's a desirable product. My favorite cut of steak is the one that the flesh eater must make him or herself to acquire it, leaving out any middlemen/women and acknowledging the murder involved in obtaining it.

I like the New York strip steak and medium. Unfortunately, I don't get these very often due to price. If I buy a larger one, we only get one and split it.
