Switching from red meat...

My husband's doctor wants him to reduce his cholesterol and eat less red meat, not that we really ate a ton of it in the first place, but okay. So now we eat even more chicken and turkey.

If you had to switch to red meat, what did you end up making with chicken or turkey that was almost as good as eating red meat?

My wife makes some good chicken meatballs.

We've found that chicken thighs have a richer flavor than chicken breasts and are also cheaper. I'm not sure what it is about chicken breast meat that is considered so desirable, we often find it to be dry and lacking in flavor.

Chicken thighs are also cheaper. I'll have to grind some chicken up and see how the meatballs turn out!
