I tweaked a recipe I found online for Stuffed Pepper Soup and am satisfied with how this has come out twice now.
Stuffed Pepper Soup
Ingredients:
1 package Uncle Ben's Microwave Original Rice (90 seconds in microwave)
1 pound ground beef
2 cups diced green pepper (approx 2 peppers)
1 cup diced yellow onion
1 jar (26 oz) Prego Chunky Pasta Sauce (Garden Combo)
1 can (14.5 oz) Hunts basil, garlic & oregano diced tomatoes, undrained
2 cans (14 oz ea) beef broth low sodium
1 Tbsp Worcestershire Sauce
1 Tbsp brown sugar
1 tsp garlic powder
Directions:
1. In large pot, cook the been, green peppers and onion until meat is no longer pink; drain grease.
2. Stir in everything else except the rice and heat through approx 15 minutes.
3. Prepare rice according to package and add to pot, stirring to mix thoroughly.
Yields approx 8 servings
