My new favorite Thai instant noodle soup base

It's so easy to make this paste to add to stock and then add some bokchoy, radishes, cauli , shroums etc plus noodle nests for a spicy soup. It's sooo good. I'm making some today now that the snow has returned.

It's from Jamies 15 minute meals and I'm hooked.

in food processor whiz up
1 thumbsize ginger
2 cloves garlic
it calls for 2 lemongrass but I use 1/2 preserved lemons
1 fresh red chili
stalks of bunch cilantro
1 tbs each honey, fish sauce, soysauce, sesame oil

Dump that into some stock and use the same processor to fine slice the veggies.

Add some lime leaves and I add a can of coconut milk. adjust the lemon etc

Cilantro tops go in too. :yum:

For that amount of paste I end up with a full Dutch oven of soup
