I don't mind incidentally working even at night if someone is in a hurry and came too late and the kids are with their dad, but that is to be nice, not because they demand a no 9 to 5 mentality.

So much depends on the field of work.
In a professional field I'd expect an idea of the salary range upfront. I'm really not interested in spending time researching a company and interviewing for a job only to find the salary is a joke. It's all very well saying it's "competitive" but that doesn't actually mean anything useful.
At the other end of the scale I remember seeing a vacancy posted that made it very clear the applicant would receive the National Minimum Wage. In other words, we're paying you the absolute minimum we're legally allowed to pay you. Don't forget to take pride in your work.
The kind of contract that offers zero base hours with anything you actually work being extra probably doesn't work for a lot of people but if all you want is a bit of extra pocket money it could be quite convenient to have an income, albeit sporadic, that you can pick up and put down as it suits you.

"Fast paced environment" - It usually means "4 people just quit and we are hoping to find some idiot who will do all that work for a single salary."

Yep. "Commensurate with experience" is another phrase they use. Or "Email us with your salary expectations." I usually let them know I expect to be paid in accordance with standard salary for this profession. In fact, I normally don't respond unless they give a range. If they give a range, I can decide if I want to waste my time (or theirs) by writing a resume, sending it in, then having an interview with usually 2-3 person panel, they write up an offer, only to decline because they pay soggy beans.
