Smothered in salsa, guacamole, cheese, lettuce and tomatoes. Yum. I actually love breakfast tacos more than anything else in the world. Delicious. I've had them only once at a local and Mexican brunch place called "Ben & Florentine".

I make mine spicy enough that a lot of people wouldn't eat them at all. My wife finds it physically painful to eat them the way I make them. So we make a taco mix that's a level of heat she can enjoy, and I just add plenty of hot sauce.

I prefer chorizo tacos that I make at home. I combine chorizo and ground beef and add my own homemade taco seasoning to the beef before combining the two meats. We don't really add much of anything on top and use flour tortilla shells but because chorizo can be spicy for my tongue I like to add a dollop of sour cream.

I have never had or seen a taco in my entire life. Mexican food is extremely rare in my country.

"Taco" is widely accepted to mean "half", "center", or "middle" in Mexican Spanish. Comes from a Native American compound word "Tlahco". So basically anything you fold in half to eat is a taco. When I lived in Mexico it was generally a street food, mainly for breakfast and lunch because it was fast and usually eaten standing up at a taco stand. Tacos are easy to hold with one hand while you have the plate in the other. The tortilla is just the delivery mechanism. So the way I like my tacos, depends on the time of day... from simple bean and eggs for breakfast to a chicken and Mole sauce with rice. As a kid I would put a hot dog in a tortilla, to me it was a taco, but it could have been a pita bread, naan or pizza crust folded in half and it still would have been a taco.
