Homemade Waffles
1/3 cup butter
2 eggs, separated and beat whites until frothy
2 Tbsp sugar
1 tsp vanilla or more
1 tsp salt
3 ½ tsp baking powder
2 cups flour
1 ½ cups milk
Start by separating eggs and beat the whites with fork or whisk until frothy. Melt butter in microwave at 25-30 seconds (I cut it up first to make it melt quicker). Add egg yolks, whites, vanilla into same bowl as butter and mix.
In large bowl mix together flour, sugar, salt and baking powder with fork. Slowly add in butter mixture and milk. Beat batter with spoon even though it will still be slightly lumpy.
Preheat waffle iron until light comes on. Pour in some batter but not all the way to the edges or it will make a mess. Then close lid and turn over and wait. Check if it seems to smell a bit to make sure it’s not burning. The light will come on when it’s finished.
