Who makes their own pasta?

I've made homemade ravioli lots of times but never used the rest of the dough until this last time. I made the remaining dough into fettuccine noodles and dried them before putting them into a container. They were quick to boil compared to boxed noodles and I used a jar sauce since I didn't have enough noodles to warrant making my own sauce.

Anyway, they turned out amazing! I'll definitely be making these again and again.

My recipe for the dough is:

1 Cup Semolina Flour
1 Cup All-Purpose Flour
2 Eggs
a bit of water

I kneaded the dough for almost 10 minutes and then put it in plastic wrap and into the fridge overnight. The next day I cut it into chunks and taking each chunk at a time I'd flatten it out, put it through the widest setting on the pasta roller. Then I'd fold it into half or thirds and run it through again about 4 or 5 times this way. It makes a nice rectangle. Then I rolled it through the settings until I went through all and the dough sit for a minute before putting it through the cutter portion of the pasta roller. After that I put the strips onto parchment paper and flipped until completely dry.

I need to get my daughter to make me a pasta dryer rack!
