How do you make your guac? What tips would you give? I made some yesterday and today and even though it tasted good it's not the best. I want to improve it. Help.

It needs lots of oil. Huge amounts of oil. That makes it easier to scrape it into the trash.

Can't stand guacamole ;)

Agreed. Guac goes directly into the trash bin.

This is without a molcajete. Roast some garlic in a dry pan with the skins on. Once a little blackened, remove the paper and press the garlic into a large bowl. Scoop out the flesh from an avocado or two and add course salt and some lime juice. Mash to the consistency of choice and top with chopped cilantro and stir.

The one many people enjoy, make a pico de gallo... diced fresh jalaneños, tomatoes and onion, salt, cilantro and lime juice. Stir that into the already prepared guacamole and you have the American guacamole dip. A nice touch is to top with crumbled queso fresco... a Mexican feta type cheese.

About it going straight to the trash, so does fast food, most German food, English food and Mideastern. But to each their own... I'm not that rude. Someone asked a question, if you don't know the answer don't bash it.

About it going straight to the trash, so does fast food, most German food, English food and Mideastern. But to each their own... I'm not that rude. Someone asked a question, if you don't know the answer don't bash it.

The question was how we make it and what tips we'd give. My post was a direct answer to the question - how I'd make it is with lots of oil and then my tip would be to scrape it into the trash :)

If you don't like my recipe you're free to not use it :p

Fair, but that would seem silly to spend $2 an avocado to just scrape into the garbage. So I assumed the questions was legit and not something for comical relief. My bad.

How often do you use your recipe for guacamole?

Oh whether you mention it or not, I assumed it. Even a scientific mind does have to assume things often, not that I'm that smart. Then the situation can continue and evidence can be certified, but as you point out, no one would have to waste too much time. I do hope you stop wasting your money, well unless you have plenty, and learn that you don't like guacamole and don't need to throw it out. That way, you don't have to take the avocado from someone that does like it, and stop giving tips on guacamole.

I didn't realize there were such strong feelings toward guacamole! :eek: You either hate it or love it I guess.

In England we have a spread called Marmite that provokes similar responses :)

Does fresh lime really make a difference over the little bottles?

With the little squirty bottles you only waste a little bit, rather than the whole lime, when you scrape it into the trash :p

Holy Guacamole (loved that, Particular!)

A bit of lemon (or lime) juice is important - or it rather soon turns brown. Just don't overdo it.

IMO, people at times put too much in it - overwhelming the avocado taste. A bit of salt (although often it's eaten with salty things) and a bit of "heat" (usually chili powder). Nothin' else. Also, some people nearly puree it; nope, keep it a bit chunky.
