I use what is called "short cut rindless bacon" here and that USA people seem to call "Canadian Bacon". So that has very little fat on it. But sometimes a rasher of normal fairly fatty bacon fried to crispness is nice.

I prefer English bacon to American bacon. What we call bacon is similar to what you call Canadian bacon (it may be the same, not entirely sure). I don't mind some fat, as long as it's cooked so it's crispy. But the bacon offered for sale in the US usually seems like it's a strip of pig fat with a few scraps of meat tucked away. If you cut away all the fat there would be nothing left.

Different parts of the pig will give a lean or fatty cut of bacon. I don't like it really fatty and I liked it cooked thoroughly and not rubbery feeling.

Maybe there's more variety in US-sold bacon than I've seen. What I've seen is largely unappetizing - unless it's cooked to the point you can audibly snap it I don't tend to bother with what I've seen.
