I just toss the trash over the back of the seat. Last vehicle I sold still had a lot of trash behind the seat for the new owner to clear out. Nothing perishable goes over the seat though, I am not gross.
Some practical things - ice scraper in the winter, spare wheel, jack etc.
Otherwise I keep a few things in the car that aren't really "car accessories" as such. Things like a spare USB cable to charge my phone if I need it, a bottle of DEET, a clean T-shirt for the times I go hiking and come back soaked in sweat and so on. I usually carry a pair of pruners and a folding saw, for times I'm hiking and encounter downed branches.
A must-have car accessory nowadays would be a USB Charger rather than a Cigarette lighter. Many people use their phones for navigation purposes, but the biggest problem is that GPS and Bluetooth take a big chunk of battery life. This is where the USB car accessory would come in handy. Although, I am yet to own a car myself.
