I guess if you keep ricotta fresh in your fridge all the time that it could work. But in all seriousness, who has ricotta on hand and only uses a dollop here and there? I have made lasagna before and never could figure out what to do with my leftover ricotta. Maybe this is the solution?

I'm quite happy with scrambled eggs the way they are, with a good slug of hot peppers or hot sauce added.

If we ever end up with some spare ricotta I might give it a try. Then add some hot peppers...

I just add milk and butter.... and beat them well before adding to the skillet. The milk adds much needed moisture and the butter adds flavor and creaminess. A bit of air helps them be a bit fluffier.
