I make really awesome chicken tortellini soup!
Dice very small and a half a cup each: carrots, celery and onions
Add olive oil to a stock pot, heat on medium and cook the carrots, celery and onions for about 5 minutes.
Cut a half of a chicken breast into small slivers and pieces and then add to the pot and cook for another 3-5 minutes.
Add 1 teaspoon of garlic or one or two garlic cloves. Only cook for about 30 seconds to a minute, you don't want it to scorch! Add 1/2 tsp of thyme leaves and 1 teaspoon of Italian seasoning.
Add 2 containers of Chicken Broth (32 oz each). And let all that simmer on low for about a half hour. (We prefer somewhat crispy veggies so you might need to cook yours longer)
In a separate pot, cook the frozen cheese tortellini package as directed and strain. Then add to the pot and enjoy!
