It's entirely possible the word translated "unicorn" simply means "horned animal" (1 or 2 horns). Not sure unicorn myths were around at the time Deuteronomy was written.

It might be talking about an animal that has two different species ….a 1-horned species and a 2-horned species.

"Unicorn" is a contraction of "unique horn", meaning having only one.

A 'unicorn' with two horns would be called something like a 'dualorn'.

Of course, having dual horns would give distinct advantage in a unicorn - dualorn duel.
