What’s a good recession-proof job?

Probably a government job, federal since they are the ones who can print money.

A lot of government non-jobs are pretty secure. You should never be too quick to get rid of your Gay Druid Pensioner Outreach Coordinators.

In the real world, grocery stores always need people and I'd hazard a guess jobs like funeral directors and church ministers are pretty safe. Work with utilities would be much the same.

If you're not too worried about some ethical concerns people always seem to be able to find money for alcohol, cigarettes etc.

In climates like Florida, AC repairmen are never short of work.
Teachers are recession proof.
Nurses have chronic shortages.

Electrician, Plumber, and Police Officer to name just a few.

I am a nurse and nurses are needed no matter what the economy does.
