Here are some early Church canon lists, some are very early in the Christian era and some are in the fourth and fifth centuries ... the one that is used within the Catholic Church corresponds fairly closely with the canon list from the second council of Carthage which was a local council (synod if you prefer to use council for oecumenical councils and synod for local councils).

Here is the list of the synod of Carthage held in 397 AD (issued a canon of the Bible on 28 August 397) and ratified by the council of Carthage in 419 AD
Canon 24. (Greek 27.)

That nothing be read in church besides the Canonical Scripture

Item, that besides the Canonical Scriptures nothing be read in church under the name of divine Scripture.

But the Canonical Scriptures are as follows:

Genesis.
Exodus.
Leviticus.
Numbers.
Deuteronomy.
Joshua the Son of Nun.
The Judges.
Ruth.
The Kings, 4 books.
The Chronicles, 2 books.
Job.
The Psalter.
The Five books of Solomon.
The Twelve Books of the Prophets.
Isaiah.
Jeremiah.
Ezechiel.
Daniel.
Tobit.
Judith.
Esther.
Ezra, 2 books.
Macchabees, 2 books.

The New Testament.
The Gospels, 4 books.
The Acts of the Apostles, 1 book.
The Epistles of Paul, 14
The Epistles of Peter, the Apostle, 2
The Epistles of John the Apostle, 3
The Epistles of James the Apostle, 1
The Epistle of Jude the Apostle, 1
The Revelation of John, 1 book.
Let this be sent to our brother and fellow bishop, Boniface, and to the other bishops of those parts, that they may confirm this canon, for these are the things which we have received from our fathers to be read in church.
The 27 books of the new testament were settled by the first half of the third century. The precise list for the old testament varied until church councils settled the matter and the matter was settled slightly differently in Greek speaking lands and in Latin speaking lands.

Around 170 AD Melito of Sardis (A Greek speaking Christian) listed these books as canonical holy scripture:
Of Moses, five books:
Genesis, Exodus, Numbers, Leviticus, Deuteronomy;
Jesus Nave [Joshua], Judges, Ruth; of Kings, four books; of Chronicles, two; the Psalms of David, the Proverbs of Solomon, Book of Wisdom also, Ecclesiastes, Song of Songs, Job; of Prophets, Isaiah, Jeremiah; of the twelve prophets, one book ; Daniel, Ezekiel, Book of Esdras. From which also I have made the extracts, dividing them into six books.
Other canon lists arose and with the passage of time the Greek speaking Christians accepted the 73 books that the Catholic Church accepts plus between one and three extra while the Ethiopian Christians accept 81 books as canonical.
