Does the Bible say anything about being kind to animals or not hurting them unnecessarily (like not eating meat)? If so, what is the exact verse?

Not that I know of, aside from the Commandment of "Do not kill." That Commandment is not just a prohibition of murder (the Hebrew word means to intentionally kill an innocent human) but was (and still is) understood by Jews and Christians as meaning to respect life. For this reason, the wealthy all over Europe would hire Jews to care for their animals - they were famous for respecting animals.

Nothing to indicate 'not eating meat' as that is contrary to Scripture.

But, I believe (Pro. 12:10) indicates that a man of God is kind to animals. Yet how intersting that it is set in juxtaposition with the 'tender mercies of the wicked are cruel'.

Plenty of places:

(On general kindness to animals)

Proverbs 15:17
Proverbs 12:10
Exodus 23:12

On killing animals:

The whole first chapter of Isaiah. The slaughter of innocent animals (blood on your hands) is part of what God is addressing here...the Israelites were doing it on His holy days, which is commanded in parts of the Torah, suggesting that these were additions to the text...which idea is further put forth by:

Jeremiah 7:21-23

By the way, Christ quotes Jeremiah 7 when he enters into the temple to drive out the money-exchangers AND the people selling animals. Jer 7:11
