Decreased judgementalism, increased wisdom and increased kindness. Growth in prayer life, growth in tolerance of differences. Loss of the need to be the centre of attention. Those are some of the things I've seen and like to see.

Dr. Mulholland use to say that you can't separate your love for God and your love for others. So, I would expect to see a difference in the way a mature believer treated other people, especially other believers.
