Can anything be learned from the non-cannical books of the Bible?

Yes
They are good to read but not for basing doctrine off of because they are breeding grounds for creating heretical dogma thus you probably shouldn't read them because they are bad ;)

But seriously, they practically teach everything a to z that you find Jesus and His apostles teaching in the NT besides the core Gospel message of faith in Christ and His work on the Cross.

These books that once appeared in the Holy Bible but aren't anymore had some very significant life lessons that superceded law alone and in my opinion, prepared Israel for the "new thing" regarding Gods plan for the grafting in of gentiles by speaking more on the importance of charity and goodwill towards neighbors/strangers and less about jurisprudence and observance of Jewish tradition.

IMO, yes. In fact, if you want to learn about German literature or computer programming or even Greek cooking, it would be good to use books not found in any tome with "BIBLE" written on the cover. Isn't that obvious?
