Do children under the age of 18 have a right to privacy from their parents while living under their roof, rent free? (Why or Why Not)

Depends. If they're normal yes, but if they do drugs in their room or talk to old creeps online the parents have to protect them.

Parents are legally responsible for their children until the age of 18 in the US. There is limited privacy for them in that they get to shower alone and sleep alone, but then there are things that parents should check on for their safety.
