Anise Biscotti

3 Eggs, beaten
1 Cup Sugar
½ Cup Oil
2 tsp. Anise Extract
1 tsp. Vanilla
1 Tbsp. Baking powder
3 Cups Flour

Preheat oven to 350 degrees F. Beat first 5 ingredients. Mix powder and flour. Add all together. Grease cookie sheets. Divide dough in 3 parts. Flour hands. Shape dough into 3 flat logs. Brush tops with milk. Bake 20 minutes at 350 degrees. Cool 5 minutes. Carefully move to a cutting board and slice the logs then place back on cookie sheets. Re-bake for 10 minutes.

Dip bottoms into icing and then drizzle more icing on the sides.

Icing:
2 Cups Confectioner’s Sugar
3 Tbsp. Milk
1/8 tsp. (or more to taste) Anise Extract

Make thick and then thin in microwave for 10 seconds if needed.

Slow Cooker Broccoli Cheese Soup

Serves: 4

Ingredients

1/3 cup butter
3/4 cups diced onion
3/4 cup diced celery
2 tablespoons diced garlic
6 Tbsp flour (I used whole wheat)
2 (12 oz) cans evaporated milk
5 cups low-sodium chicken broth
5 cups diced broccoli
1/2 cup heavy cream
14 oz shredded sharp cheddar cheese
2 oz shredded monterrey jack cheese
Salt and Pepper to taste
Sour cream, more cheese, and cilantro for garnish (optional)

Instructions

In a large skillet, heat butter over medium heat. Add celery and onion and stir until translucent and soft, about 3 minutes.
Add garlic and flour, whisking to combine. Continue to whisk as you pour in the evaporated milk and whisk until fully combined. Season with salt and pepper to taste.
Cook the sauce until thickened, about 2-3 minutes.
Pour sauce into slow cooker and add chicken broth and broccoli. Stir to combine. Cook on high for 3 hours or on low for 6 hours.
Turn off heat and stir in cream. Stir in all the cheese (in batches) stirring to melt and combine.
Serve hot garnished with sour cream, cilantro, and more cheese if desired.

5-Ingredient Cheesy Bacon Dip

Serves 6

Ingredients

1 (8 oz.) package cream cheese, room temperature
2 cups sour cream
1 1/2 cups cheddar cheese, grated
1 cup bacon (6-8 slices), crumbled
1/3 cup green onions, chopped


Directions

Preheat oven to 375º F.

In a large bowl, combine cream cheese, sour cream, cheddar cheese, bacon and green onions and mix until they’re totally combined.

Transfer mixture to a round baking dish and place in oven.



Bake for 30-35 minutes, or until cheese is totally melted and dip is bubbly.


Remove from oven and serve with chips or toasted bread.

Mostaccioli Mosta

1 lb. ground beef
1 C. onion, chopped
1 (16 oz) can diced tomatoes
2 (8 oz) cans tomato sauce
1 C. black olives, coarsely chopped
¼ C. Parmesan cheese
1 tsp. Seasoned salt
1 tsp. Oregano
¼ to ½ tsp. crushed red pepper flakes
1-1 lb. Pkg. Mostaccioli or Penne pasta
2 TBSP. softened butter
1 C. Mozzarella cheese, shredded

In large skilled, cook ground beef and onion until onion becomes translucent; drain excess grease. Add tomatoes, tomato sauce, olives, Parmesan cheese, seasoned salt, oregano and crushed red pepper. Simmer 15 minutes.

Prepare pasta according to package directions. Drain.

Toss with softened butter. Arrange in a 3-qt. Shallow baking dish; pour on meat sauce and top with mozzarella.

Place under broiler 2-3 minutes until cheese melts (don’t burn it!).

Makes 8-10 servings.

Pumpkin toffee poke cake:

Serves: 9
Ingredients

1 box vanilla cake mix
1 (15 oz) can 100% pumpkin puree
2 tsp pumpkin pie spice
1/2 cup caramel sauce
1 (8 oz) tub whipped topping- thawed (or homemade)
2 cups toffee covered peanuts- crushed


Instructions

Preheat oven to 350 degrees
Coat a 9x9" baking pan with shortening & set aside
In mixer bowl, combine cake mix, pumpkin & pumpkin pie spice & beat on medium until well combined
Transfer to prepared baking pan & bake 30-35 minutes or until cake springs back when slightly pressed
Remove from oven & immediately poke holes all over cake with a small thin object - I used a skewer
Immediately drizzle caramel sauce all over cake making sure to get it in all those holes you created
Chill in refrigerator until completely cooled
Top with thawed whipped topping & crushed toffee covered peanuts

Pasta Sauce with lentil sprouts on toast.

I had this this morning.

1) Sprout lentils
A) Rinse lentils, then cover in water and let soak for 12 hours
B) Drain, rinse, drain, cover
C) Sprout for 2-3 days or however long you want (important: Sprouts must be rinsed and tossed at least once a day or mold will develop)

2) Sauce:
Mixture of unsweetened tomato sauce, garlic powder, onion powder to taste (I prefer 2 parts onion powder to 1 part garlic powder) + salt to taste.

3) Add small amount of cooking oil to pan (small, enough to cover pan and that's it)
4) Add sauce, turn heat on low or medium
5) Add sprouts to saucepan and stir well.

When warm, spread on toast.

Note: sprouts retain most of their goodness, including vitamins, minerals and enzymes if heating time is short and gentle - so just heat till slightly warm.

Easy, tasty, healthy:

Boil half cup of water
Thinly slice a portion of Ginger Root, dice into fingernail size pieces
Add boiled water to a cup containing Ginger pieces, cover and steep for 5 minutes

Sweet:

Add honey or raw sugar and enjoy

Savory:

Add to large glass of tomato juice, ice cubes and pinch of salt.

My take on Houlihan's Tuscan Salad

White Northern Beans or Canellini beans
Field Greens
Chopped Plum Tomatoes
Feta Cheese
Balsamic Vinaigrette Dressing

I made it fancy by lining it all in a cup but I prefer to just put it all on a plate and drizzle with dressing. I haven't made it in a couple of years but it sounds good right about now. Proportions are up to you!

This colorful fruit salad may be made up to a day in advance if you add the banana just before serving. Fruit-sweetened desserts not only satisfy a sweet tooth, but they’re full of healthy antioxidant-rich foods. In this case, you’re better off opting FOR dessert!
Makes about 4 cups (4 servings)
Ingredients
2 oranges, peeled and chopped
2 cups pineapple chunks
1 banana, sliced
1/4 cup shredded coconut
2 - 4 tablespoons dried cranberries
1 tablespoon orange juice concentrate
1/2 teaspoon almond extract
1 tablespoon water
Directions
Place oranges, pineapple, banana, coconut, and cranberries in a medium bowl. In a small bowl, mix orange juice concentrate, almond extract, and water. Pour over fruit and toss to mix.

Stored in a covered container in the refrigerator, leftover Ambrosia without the bananas will keep for up to 2 days.

I like recipes that do NOT include Rabbit meat and that have fewer than 3 ingredients and require no more than 5 mintues to make. And it's a plus if no more than one thing is dirtied in the process and will need to be cleaned.

I like recipes that do NOT include Rabbit meat and that have fewer than 3 ingredients and require no more than 5 mintues to make. And it's a plus if no more than one thing is dirtied in the process and will need to be cleaned.

I know what you mean. I don't like to use a lot of pots and pans and only do when I make a major meal for inlaws when they come over or when I make spaghetti.
